Pony & Plume

Whisky connoisseurs and cocktail lovers alike will find a new home for the senses with the opening of Pony & Plume at Capella at Galaxy Macau. It is home to more than 650 whiskies presented through eight distinct flavor profiles and a Macau-inspired cocktail program. Here, the bar’s name is its creed: the pony – a precise measure of spirit – represents intention in every pour, while the plume is the bar’s calling card, introduced as an aromatic cloud of smoke that infuses its signature cocktails, bar snacks and the divan experience.

Signature Drinks

A-Ma-Gau Fashioned

Honors Macau's naming origin from the A-Ma Temple. A twist on the Old Fashioned using Japanese whisky as the base. Deep notes of roasted hojicha and cold brew coffee are balanced by black honey and apricot. A timeless drink, layered like the cultural crossings it represents when Portuguese sailors first landed in 1557.

Islay Libre

A signature reinvention of the Cuba Libre. Peated Scotch and aged rum blend with spiced cola and palo santo, evoking Macau's era as a trading port. This smoky, aromatic drink captures the scent of exotic woods and spices that once perfumed the historic Rua da Felicidade.

Tamarillo Daiquiri

Celebrates Macau's role on the Maritime Silk Road. The tamarillo, a fruit carried across oceans, symbolizes reinvention. Paired with white rum, floral jasmine, fino sherry, and wildflower honey. A bright, unexpected drink that speaks of trade winds and the unique, cross-cultural spirit of Macau.
