Sustainability is at the heart of the festival. Every detail of the event is thoughtfully designed with the planet in mind.
All installations are built using recycled PVC and reclaimed wood, with booths and resting areas crafted from repurposed pallets sourced directly from Galaxy Macau’s warehouse. Tables and chairs are made from recyclable PVC, generously sponsored by local enterprise Taion, while most utensils are eco-friendly.

2023 World Barista Champion
The first Brazilian ever to win the World Barista Championship, Boram Um is a three-time Brazilian Barista Champion and a leading figure in modern specialty coffee.
Born in São Paulo to Korean parents, Boram grew up connected to his family’s Fazenda Um coffee farms in Minas Gerais and Espírito Santo. Known for his innovative coffee processing methods, he has helped elevate Brazilian coffee onto the world stage. Today, Boram owns ULT Roastery in Asia, continuing his mission to share Brazilian specialty coffee with the world.
2023 World Latte Art Champion
A trailblazer in latte art, Liang Fan is the 2023 World Latte Art Champion, celebrated for combining artistic precision with contemporary coffee culture.
He is currently the Brand Ambassador for MHW-3BOMBER, spokesperson for Junlebao Dairy Ingredients Division, Franke Coffee Systems China Brand Friend, and LINK BAR Brand Spokesperson. Liang Fan continues to push latte art beyond the cup, bringing visual storytelling and innovation to coffee stages worldwide.
2024 World Barista Champion
Mikael Jasin made history as the first Indonesian to win the World Barista Championship, and is also a three-time Indonesian Barista Champion.
Widely regarded as one of Asia’s most influential coffee professionals, Mikael is the founder of Catur Coffee Company and So So Good Coffee Company, creator of Jakarta’s omakase-style coffee bar Omakafé, and Chief Coffee Innovation Officer at Fore Coffee. His vision bridges specialty coffee and everyday enjoyment, while championing a more inclusive and collaborative global coffee community.
Two-time Malaysia Brewers Cup Champion (2017, 2019)
Shaun Liew is a two-time Malaysia Brewers Cup Champion and an established coffee professional in the specialty coffee scene. He is the co-founder of ONO, Curate Coffee Roasters, and flaaahwithONO, with a strong focus on flavour development and professional education.
He began his coffee journey in 2012 at the Coffee & Tea Academy of BERJAYA University College, building a solid foundation as café culture rapidly evolved. Since 2017, Shaun has served as a coffee competition coach across barista, brewers, and latte art disciplines, contributing to the growth of specialty coffee talent in Malaysia.

At “Galaxy Macau Chill Coffee”, we present a curated series of workshops ranging from coffee tasting, signature drinks and mixology, professional cupping sessions, latte art fundamentals, sensory pairing experiences, and sustainability-inspired crafts. The programme is further elevated by a Coffee Omakase experience, where a champion barista presents a chef-style tasting journey through coffee and matcha.

Coffee Omakase Experience by Shaun Liew
Curated and presented by two-time Malaysia Brewers Cup Champion Shaun Liew, this Coffee Omakase features three specially crafted coffee and matcha drinks made with seasonal coffee beans and premium matcha. Each drink highlights Shaun’s distinctive brewing techniques and flavour design, offering a refined and layered tasting experience. During the session, Shaun will share his approach to coffee selection and flavour development in a relaxed and engaging setting.
Nespresso Workshop – Coffee Tasting & Special Recipe Experience
Step into the world of Nespresso through a guided experience that blends brand heritage, sustainability insights, professional coffee tasting, and hands-on recipe creation. Participants will gain practical skills to elevate everyday coffee moments while exploring new flavour possibilities.
The Art of Coffee Mixology – Coffee Cocktails & Signature Drinks
Discover the creative side of coffee through an introduction to industry trends, signature drink concepts, and bartending fundamentals. Led by So Johnny of Arooma Coffee & Bar, this session offers a hands-on experience in crafting coffee-based cocktails that bridge café culture and mixology.
Coffee × Perfume Pairing Workshop
A multisensory journey that connects coffee and fragrance. Learn about perfume ingredients and top, middle, and base notes, create your own 10ml custom perfume, and experience guided coffee-and-fragrance pairings that reveal unexpected harmony between aroma and flavour.
Coffee Grounds Incense Pendant Workshop
Transform coffee grounds into a meaningful creative piece. This workshop explores sustainable upcycling, fragrance blending with natural ingredients, and mindful handcrafting — offering a calm, immersive experience that turns waste into art and personal expression.
Tri-Up Cupping Session
Join the Tri-Up team for an in-depth cupping experience featuring seasonal coffees. Learn about processing stories and flavour profiles, and develop a deeper appreciation of coffee complexity through guided tasting and discussion.
Latte Art Level 1: Foundations Course
An entry-level latte art course covering espresso extraction, milk steaming, and texture control. With hands-on pouring practice and expert guidance, participants will learn to create classic latte art patterns and build a strong foundation for further skill development.
Coffee Art Sugar Cookie Decorating Workshop
In this one-hour hands-on session, participants will decorate three coffee-themed sugar cookies using royal icing techniques. Learn basic piping, flooding, and detailing to create edible coffee-inspired artworks. All materials are provided.
Upcycling Coffee Capsules into Jewelry Workshop
