Timeless Flavors of Macau

Galaxy Macau Tam Chai Yu Chun
on-going

Presented by Galaxy Macau™ in collaboration with local SMEs, “Timeless Flavors of Macau” celebrates the city’s vibrant culture and history. Each local brand of the series is a testament to the rich culinary tapestry of this “Creative City of Gastronomy”, and that includes the household brand featured in our latest collaboration—"Lane de Peixe Ieng Lei.”

September 1 to October 31, 2025

Tucked away in Coloane—once a picturesque fishing village—Ieng Lei carries forth the tradition of preserving fresh catches from fishing boats by exposing them to the blazing sun and briny sea breeze, resulting in intensely savory delicacies beloved by the community for over half a century.

Galaxy Macau Tam Chai Yu Chun pays homage to Ieng Lei through a menu of six masterfully crafted dishes. “Pan-fried Pork Patty with Salted Fish” features hand-chopped pork mixed with bits of salted fish then pan-fried to a golden crisp. “Pan-fried Salted Threadfin Fish” boasts a crispy, aromatic exterior while remaining tender inside. “Braised Fish Maw with Salted Fish and Eggplant in Claypot” is a comforting dish pairing soft, luxurious fish maw with eggplant which soaks up the umami richness. Expert control of heat and layers of flavor make our “Fried Brown Rice and White Rice with Salted Fish, Seafood and Grated Ginger” a must-try.

These exquisite dishes are available for a limited time only. Reserve your table now to experience the ocean’s essence, refined through time.

The star of our latest instalment is Porthos, a well-established canned fish brand that has brought the humble sardine from the coast of Portugal to Macau. The journey that began 80 years ago has resulted in a fusion of Portuguese and Chinese gastronomy, with canned sardines becoming a staple in family kitchens and local cha chaan tengs.

For a limited time, you can savor a menu of five Porthos dishes at our popular cha chaan teng Waso Cafe. Enjoy Macau’s famous spicy sardine buns with a touch of Waso’s iconic flair. For an authentic local experience, order our instant noodles served with a whole can of Porthos sardines, as enjoyed by locals at home.

As Porthos continues to extend its legacy with innovative products, we are delighted to offer some of the new favorites including Sardine and Spring Onion Crackers, Sardine Cookies, Porthos Assorted Gift Set, and Smoked Collection Gift Set—perfect as souvenirs or to be enjoyed at home.

Explore Waso’s Porthos-inspired cuisine and discover the charm of Macau as a Creative City of Gastronomy.

Tong Iec Pak Fa Fui, a local maker of preserved fruits and cooking sauces, is the first SME showcased in the collaboration. Established in 1903, Tong Iec remains committed to traditional methods, however time-consuming and labor-intensive they may be. Their iconic products Queen Mother Dried Flat Peach, Superior Soy Sauce and Sweet Vinegar are hugely popular throughout the Greater Bay Area and are in great demand among tourists from Southeast Asia.

The culinary team at Waso Cafe has meticulously incorporated Pak Fa Fui’s beloved products into three exceptional dishes and three refreshing beverages, creating a harmonious fusion of flavors that will delight the senses.

Indulge in the “Pork Ribs with Five Preserved Vegetables”, where the sweet, sour and salty notes of Pak Fa Fui’s preserves perfectly complement the tender pork ribs. Savor the “Stir-fried Noodles with Soy Sauce”, showcasing the premium soy sauce and dark soy sauce from Pak Fa Fui, resulting in a dish with a sweet, savory and smoky profile. Experience the “Braised Pork Belly in Waso Soft Bun”, a creative combination that utilizes Pak Fa Fui’s ground bean paste to braise the pork belly until tender, which is then paired with sweet preserved ginger and Waso’s signature soft bun.
