As spring gently emerges, Yamazato presents the Yayoi Kaiseki—an elegant seasonal journey inspired by March’s quiet renewal. Each course reflects the fleeting beauty of the season, paired with curated sake to enhance its delicate nuances.

The experience opens with an artful selection of early spring offerings, highlighted by whitebait scented with cherry blossom and leaves, paired with Nichinichi Junmai Yamada Nishiki. A clear soup of Kanagawa clams, bamboo shoot, and fragrant kinome follows—pure, refined, and evocative of early spring.

Firefly squid, lightly smoked over cherry wood, is followed by delicately sake-steamed Aomori rockfish—its pristine texture matched by the gentle earthy notes of wild vegetables.

Main course is seasoned rice with Hokkaido cherry salmon and wasabi flowers, delivering layered warmth with a refreshing finish.

Dessert concludes with Shizuoka Crown Melon and seasonal fruits, accompanied by the bright citrus notes of Bijofu Yuzushu, its lingering fragrance echoing a soft spring breeze.
